The thing with me not posting much anymore is that I think I JUST did. I suppose it's a mental disorder. I have felt like I just posted and then suddenly yesterday I realized that yes, sure. A WEEK AGO. Time flies when you're having fun?

I am happy to say that I am still on the wagon, so to speak. I've been to the gym for exercise three times and we've been swimming three times, in one week, so I think I'm doing pretty well for my first week. I took yesterday off because my shins were all...splinty... on Wednesday, but was intending to go today. I'm not sure that's going to happen, though, but due to circumstances beyond my control. Both M and E woke up this morning (where I say "this morning" with the most flexibility possible, as E came crawling into bed with us twice, and neither of the parents in the bed sleep very well when she does that.) with indications of sickness. The fact that she was up all night is the very first indication, honestly. We're still in denial, i mean, hopeful that neither of them are actually sick... but I can't take her to the child watch while I think she's sick. It would be wrong, as I have spent way too much time complaining about people bringing their sick children around well children. So... another day off, I guess. Maybe I'll do the wii exercise program later.

On the food front... I'm even still fairly enthusiastic about that, though I had one day of upset. I *think* possibly that I feel better and have more energy, and thus far, my blood sugar has been perfect. I can only say that I think, though, because I certainly feel better than last week when I was PMSy. ;) Hard to compare other than that! [livejournal.com profile] misschili told me to feel free to post recipes, so... hope the rest of you don't get mad at her for that. ;) I've had one major success (well...two, actually), a couple of failures and the rest of the week has been pretty good but not necessarily stuff that I fell in love with.

Creamy Southwest Chicken is the best thing I've made so far. I've made it twice, and the first time it was brilliant and the second time it was....so-so. So, a few notes. The first time, I used a 4 oz can of green chiles and half a can of diced jalapenos, because I accidentally opened (and bought) the jalapenos and I couldn't bear not using them at all. I left them out the second time and I won't do that again. I also used more cheese than it called for, of course. (1/3 cup? Ha. Yeah. Right.) However, my method of low-carbing allows me to not count carbs in dairy or vegetables, so someone who was following a more strict plan would probably not have done that. :) Just so you know, when I say "my method" I don't mean that I am making that part up just so it'll be easier. The book says so! Last night, I used a 7 oz can of green chiles (like the recipe said) and it was... meh. Add some jalapenos.

The other success is that I served it with cauliflower instead of rice. I have never believed in these diety substitutes that people talk about--replacing one thing with another because it looks the same? HA! Never going to be tasty! So when I saw the low-carbers talking about throwing some cauliflower into a food processor until it turns into tiny little pieces like rice, I thought it was somewhat crazy. It looked a little fun, though, and I thought that at worst, it'd end up being a bowl of buttered cauliflower, which is a perfectly sensible side dish on its own. Turns out that if you dump sauce on it, you pretty much can't tell the difference. It bulks up your meal in much the same way. Every now and then you sort of get a little cauliflower taste in with it, but it's more like your sauce/meal has a little cauliflower in it than that your rice is fake. M is quite loving the cauliflower rice thing and went so far as to say that if he hadn't known, he wouldn't have noticed the difference by taste. It doesn't look quite the same but it's similar. I think that rice would be slightly more delicious, but it's really good. The concept of reducing nutritionally bankrupt white rice from our diet and replacing it with fresh vegetables, even if I wasn't low-carbing, is pretty darned appealing though. Try it! It's fun. Process (or shred by hand) your cauliflower (I did a little more than half a head for one meal) and put it in a microwave-safe bowl. Cover and cook for about six minutes. You don't need to add water or anything else. Butter, salt and pepper and you're done. Super easy. I put it in a large glass bowl with a plate upside down on top.

Also, it allowed me to finally justify a food processor purchase. I have a tiny one, given to us at our wedding, and I've made it work for ten years, but cauliflower is incredibly impractical to do in it because of its size and texture. New kitchen gadgets! Yay!

I have often mused that I am really a serial hobbyist at heart. I get into something and spend inordinate amounts of time researching, buying, planning, and then I do it for a while and then after a while, lose interest. Tatting, knitting, cross-stitch. In the last few years, it has become obvious that it's not about being a serial crafter, it's about being a serial researcher. Cloth diapers, coupons... and now low-carb and fitness. It's exactly what I've needed to do in order to actually get started so I'm happy that the research phase has stuck. It's a good sign that maybe it'll last a little while.

That's mainly what's going on with me this week so it's pretty much what I have to talk about. I'm also really trying to get my desk cleaned up and organized, but I think that an in-depth discussion of how I cut and filed all my backlog of coupon inserts this week would perhaps be better left undiscussed. :) I'm feeling the urge to spring-clean, but it's pretty difficult to get too into huge projects like that because I'm lazy like that and my kiddo will always seem to want to do something in a different one than the one I'm working in. ;) Cleaning is pretty much my plan for today, though. For one thing, if M and E really are getting sick, it's pretty likely that I"ll be next and I hate being sick in a pigsty. Guess I'd better get to it while Evie is distracted by her Little People/Playmobil/Polly Pocket/Princes table. :)
