*expletive deleted* We just got back (at almost eleven pm) from Walmart, where we bought three and a half dozen eggs and some fruit for a fruit salad tomorrow. (My parents are having an Easter egg hunt and barbecue.) And, because we are morons, we totally forgot to buy pudding with which to make said fruit salad--the ingredients for which were the entire reason we were at Walmart to begin with. It's really good, actually.. I'll add the recipe to the bottom. I've personally never made it but Mom told me how to do it tonight because she volunteered me to make it for some reason.

I had a half day of work today because of Good Friday, and I had arranged to met my parents at my house at noon. We went out to lunch and did a lot of shopping.. bought a dress, though, which I've been needing for a while. It would take me a while to explain the whole thing about church and why I stopped going, but I've been thinking for a long while now that I'd like to start going back, and besides, we have a wedding to go to next month. AND! I finally finally finally got a new phone. I've been out of contract for ages, and have been indecisive about what to buy. So, yay! I know that it's dorky to get so excited but I love the smell of new gadets.

Also, my parents, who are extremely lovely people, brought us a lawn mower, a window-unit air conditioner, M's old desk from storage and some various things they thought we might need. Dad also fixed our wonky second toilet and helped us mow and weedeat the front yard (and weeds in the back), and then hauled away our messy stacks of boxes in the garage and some random stuff destined for the dumpster. One thing we accomplished in the yard was something that I was completely overwhelmed by.. the piles of leaves on the slope in the front yard. It looks really nice out there now. I love spring. Oh, and we don't exactly need a window a/c unit, if you're curious, but we may be able to use it in the basement or somewhere, and (let me see if I can get this straight) my mom's uncle's wife's sister's daughter was just trying to get rid of it, so my parents took it and then thought we might need it.

Anyway, here's the recipe. It's very nice this time of year, especially.

Mom's Fruit Salad
1 small can mandarin oranges, drained. (throw away juice.)
1 normal-sized can of peaches in light syrup
1 normal-sized can of pineapple tidbits.
1 large (or 2 small) boxes of vanilla pudding, NOT instant.
Semi-optional: a couple of sliced bananas, grapes
Other fruit as desired.

Drain peach and pineapple juice into a bowl. Prepare pudding with two cups of reserved juice (add water if you don't end up with two cups.) Whisk constantly to prevent scorching. The pudding will turn sort of clear, and that's when it's done. Add fruit, combine. Serve with cool-whip or whipped cream if you're fancy. My family tends to use sugar-free pudding, as basically everyone is diabetic.

You know, I might make that for the dessert I need to bring to work this week. I was going to make strawberry pies, but this would be easier and cheaper. Hmm.. We'll see.

I have lost all my words. I have things I want to say but I don't know what they are. Yesterday was not good at all, and today wasn't exactly a bowl full of cherries.. which is good because I don't like cherries. I made M laugh, great big belly laughs, when explaining last night why I was so upset and stressed out but I couldn't do it again in text and even if I could, I wouldn't want to. I made a cake last night, a to-be beautiful homemade cake with strawberries and fresh whipped cream and jam and does anyone want a Springform pan that leaks because I sure as hell have one to get rid of? I had to take a store-bought blah cake to work instead. It's not like I've been planning on taking a real dessert for once, not for weeks or anything, of course not. And the boy watched a comedian earlier that he laughed and laughed at, and I couldn't go downstairs to join him because I had things to do and an excess of responsibility. But chicken gillespie is good, and the strawberry cake tasted alright except for being too thin and therefore overcooked and therefore texturally unappealing. So maybe I will just not talk about any of those things and go on to bed because I am a big girl and I can go to bed whenever I want to.

In other news, go read Mosaic Minds, which is now at its fifteenth issue. I read less than usual this month so I don't have any specific recommendations.

The soup I made for dinner is possibly the best soup that either of us have ever had. Really, really good. (My alterations included using less mustard (and not Dijon cause we don't have any) and cayenne instead of tabasco.) I have never been a big fan of vegetable soup because I don't care too much for tomato, but basing it on chicken broth and cheese and wine, now I can get on board for that.

Here! Look! Pictures so you don't notice I have nothing much of interest to say today!

But man, my cousin has cute kids.

 


Devon, age six, and Elizabeth, 13 months. I feel a little bad now that I don't take any pictures of their older sister, but she was off playing with Whitley or something. Oh, and Devon's hair is sticking up from the balloon, although you can't tell as much here because it had already fallen mostly down. You were going to get pictures of the meatball cooking event, with comparative pictures to the time when M attempted it. But then I got bored with the whole thing, mainly because the pictures we have of the meatballs clearly show that they are pretty normal looking food items. They looked, if you will excuse the redundancy, like meatballs. M's meatball goo did not so much look like meatballs but for how long can I make fun of a man over the same cooking disaster? Besides forever, and all? And you might have gotten a picture of Elizabeth and me as I was throwing her around (oh, goodness, does my back wish I would stop doing that) but I look rather deathly bad so no.

(p.s. Ignore the ugly of the gallery. I got it installed but ran out of steam before I made it pretty. That's a post for another time, preferably when I'm done with it all.)

I have a sad story to tell, but I'll put it off for a few minutes while I write about the rest of the day. I'm so completely exhausted tonight that I can barely stay in my chair. Can't go to bed because the sheets are still in the dryer, so I might as well ramble on about things.

For [livejournal.com profile] denyeverything. :) I couldn't find the link I got the recipe from, but then I remembered that my version is translated anyway so I could just post it here. I'll leave it the way Magnus translated it for me, because I thought his commentaries were cute. And passed tomatoes = tomato sauce, or at least that's what we use. ;) It's not quite the same as the stuff you get in a restaraunt, but it's pretty good for homemade pizza.. you know how it never turns out like the pizza place. This is really the only thing Magnus misses from Sweden, though.. especially now that he found big round knäckebröd (hard bread) at Liquor Barn.. :)

Swedish Pizza (Link goes to a picture of our first attempt last year)

1 packet yeast.
1 teaspoon of salt
3 dl of lukewarm water. (3 dl is 300ml. It’s on the measuring cup thing.)
Approximately 2 tablespoons of oil.
Approximately 1 liter (1000 ml) whete flour. Believe that’s AP. Not self rising!
Oil for brushing.
Passed tomatoes. You translate.
Shredded leftover cheese mixed with mozzarella
Oregano
Other toppings*
  1. Mix yeast with salt and oil. Add the water. Add flour until the dough is no longer sticky. Powder with flour, cover and let rest for about 35 minutes.
  2. Prepare the toppings.
  3. When the dough is done rising, it’s about the right time to set the oven to 450.
  4. Knead out any air pockets and divide the dough in two.
  5. Work both pieces to thin plates, about the right size for a regular oven plate thing. Put the dough plate on baking paper and brush with oil. Put the plate at the bottom of the oven and bake for about 10 minutes. The pizza mustn’t get burnt, just get done.
  6. Take the pizza out of the oven and add the cheese mix and any other toppings. Sprinkle with oregano.
  7. Finish the baking in the middle of the oven for about 10 more minutes.

Not that this makes it any healthier or anything, but drizzle the top with oil before throwing it into the oven. To be a proper Swedish pizza, the dough should be extremely thin, and it shouldn't really get crispy at all. Eat with a knife and a fork (in your left hand) and you'll be just like a proper Swede. ;)

*Proper toppings seem to consist of anything you can find. Magnus likes salami and onion. I always order whatever vegetarian pizza they have. Onions, mushrooms and bell pepper, usually. Salami makes me gag. As far as I can tell, no one likes to chop the stuff up first, just sliced into rounds. I really can't explain this aspect of the Swedish-style pizza process. Ask a Swede what to put on your pizza. ;)

  • Yesterday I had fish sticks for lunch. I was so bewildered by the "recipe idea" on the back of the box that I felt compelled to share it with all of you.
  • Fish logs.
  • I have two key questions.
    • Who came up with this idea?
    • Who would eat this?
  • I bought a tshirt at WalMart and made my Bork shirt today. (The graphic is downloadable from the Opera site.) It looks cute, but the B is flaky and ready to peel, and all of the transfer cracks when stretched. This annoys the heck out of me. At least it's comfortable. I might be wearing it around the house, at least. As expected, washing it (just checked) did not actually help matters. :(
  • I did not lie on the insurance form when it asked for my weight. I feel strangely empowered by this.
  • During the power outage last week, my aunt told a quite humorous story. See, we've had insanely sucky weather lately. Apparently, during one of the recent big storms, there was a tornado warning. My cousin's husband, desperately trying to keep their house from blowing away... runs into the bathroom and fills up the tub with water. You know. To make the house heavier. *giggle* Wtf? :)
  • I can entertain myself for hours simply by playing with text formatting.
