
Normally, we don't have dessert, but inspired by Magnus's memories of an ice-cream and pineapple dish, I decided to recreate bliss for him today. I cut the top off the pineapple this afternoon, cored it and filled it with good vanilla ice cream. I replaced the top and headed for the freezer.. where I realized, of course, that a full pineapple does not fit in a freezer. No problem, I think, and cover the exposed halves with foil, putting the top in the fridge, as I couldn't see a point in making space to freeze it. I pull it out tonight and reassemble it briefly to show off to the hubby, which he construes as a photo opportunity.
I had decided that the best way to go about eating this masterpiece would be to cut it into slices. I was imagining a perfect circle of fruit with a smoothly cut slice of ice cream on the inside. This did not occur in quite that manner. Instead, I hack my knife into the bottom, it falls off.. and the melted ice cream falls out. *rofl* I hack the rest of the pineapple into two rough pieces (spraying melted ice cream all over the counter) and slap them on a plate. There is about a half cup of not-quite-melted ice cream lying on the cutting board. As we stared at the remains of my beautiful desesert, it occurs to us that either a) the enzyme in tropical fruit that breaks down gelatin also works with ice cream or b) the refridgerated temperature of the pineapple insulated the ice cream against the temperatures in the freezer and caused it to melt. This caused a massive fit of giggles.
All wasn't lost, though. While Magnus cut the spines off (no point in it looking beautiful NOW), I started scooping ice cream into each fruit circle. We drizzled them with fresh juice, which I had saved this afternoon, and it turned out to be one of the best desserts ever. It actually looked pretty good, too. Somewhat Emeril, if I'd had a sprig of mint or something. Hmm. Probably should have reduced the juice if I wanted to be cooking-show-host, but still. The acidity of the pineapple and the sweetness of the ice cream did marvelous things together.
But next time.. I won't be constructing it in advance.
